Use the leaves in green or fruit salads, fruit tarts, pea or lamb based dishes or teas. Leaves can be added sparingly to soups and stews. The sage-mint flavor of the leaves can be slightly bitter. The flowers are also edible, with an anise flavor and a light honey scent...use to garnish salads. Hyssop oil is used in French dressing. The seedheads are great in dried arrangements. Flowers and leaves good dried for potpourris. Hyssop attracts bees and butterflies.
